Chorizo

This version of chorizo included lean pork, fatback, crushed red pepper flakes, chopped garlic, ground cumin, cayenne pepper, salt, paprika, and red wine vinegar. The fatback and lean pork were ground together and the rest of the ingredients combined.

The meat was cooked in a saute pan then plated.

Prep: No problems with prep. We ground the meat and combined the seasonings.

Presentation: The chorizo was simply placed in a bowl.

Taste: This recipe is a more mild version of chorizo than what I've had in restaurants and from what I've made at home.

Overall: A simple recipe to make.
